This Chinese-style dish is a favorite item to order whenever we have a lauriat meal at a local Chinese restaurant. My eldest daughter Shawna and I decided to recreate it at home and we totally loved the result because we had control over what went into the shrimps. So we are sharing our Chinese-style Hot Shrimp Salad Recipe with you. Maybe you can make it for Chinese New Year?
We Love Shrimps!
Needless to say, we love shrimps and that is the reason why I have several shrimp dishes in this blog.
Last time, I shared with you that my father-in-law bought shrimps one kilo after the other and he kept talking about the camaron rellenado, which we also cooked for the family. The next dish that we prepared is the Chinese-style hot shrimp salad recipe.
We would usually order this at Golden of Fortune Chinese Restaurant here in Bacolod City. I know it’s quite easy to cook, however, the process could take very long because you have to prepare two dishes separately.
But it is totally worth it.
Chinese or not, those on a diet would find this as a meal in itself if you pair it with toasted bread. Or you can add lots more lettuce and some boiled eggs for a complete meal. There’s protein and lots of fiber in it plus there’s nothing boring about this salad. Except if you are allergic to crustaceans. huhu
So without further ado, here’s my Chinese-style hot shrimp salad recipe.
Hot Shrimp Salad Recipe
If you prefer the cold shrimp salad version, you can steam the shrimps and peel them. That way you can also avoid the oil. But we prefer the flavorful version: we are using fried shrimps!
By the way, I want to mention that you can use prawns for this recipe. However, prawns are really very expensive nowadays and with its weight, you only get a few pieces to 1 kilo. So, shrimps it is.
The fried shrimps is already a dish by itself. You can eat the flavorful fried shrimps dipped in catsup or sweet chili sauce. Or you can make a garlic-mayo dip with some grated cheese. So yummy!
But for the dish in the picture, this is how we did it.
Ingredients:
This is a two-part s dish, starting off with the making of the fruit salad and then the hot shrimps. It is best to prepare the fruit salad beforehand and then chill for at least two hours before serving.
For the Fruit Salad
- 1 can fruit cocktail
- 250ml box all-purpose cream, chilled
- 1 ½ cup mayonnaise
- Salt, pepper, sugar to taste
- Lettuce, romaine or iceberg
For the Hot Shrimps
- ½ kilo large shrimps
- Lemon juice or calamansi juice
- Salt and pepper
- Flour, seasoned with salt and pepper
- 2 eggs, beaten and seasoned with salt
- Bread crumbs
- Cooking oil
Cooking Hack: For more garlicky shrimps, you may mix a sachet of garlic powder into the flour.
Procedure:
- Drain the fruit cocktail of its syrup. Set aside for at least 30 minutes.
- In a bowl, mix the chilled all-purpose cream and mayonnaise. Season with a pinch of salt, white pepper, and about ½ teaspoon sugar. Mix well and taste the dressing. You may adjust it according to your taste. Chill and prepare the shrimps.
- Drizzle lemon or calamansi juice on the shrimps. Swirl it around to mix and then pour out to drain. Season with salt and pepper, mix and it let stay on the strainer. Set aside.
- Prepare three bowls and arrange them side by side for easy management. On the first bowl is the seasoned flour, next would be the beaten eggs, and lastly the bread crumbs.
- Roll each shrimp in the flour, dip in the egg wash, and finally roll in the breadcrumbs. Arrange them on a tray. It can get messy on the fingers so just rinse your hands in water from time to time. Prepare a plate with some paper towels to drain the oils after frying.
- Get ready to fry the shrimps. Heat cooking oil in a non-stick pan. Keep it at medium heat and fry each shrimp until golden brown, about 4-5 minutes each side. Put them on a paper towels after each one is done.
- When you’re done frying all the shrimps, leave a few pieces for toppings. Mix the rest carefully with the fruit salad. If the dressing is not enough to cover the shrimps, add more seasoned mayo. The shrimps taste best with smothered with the dressing.
- Serve the hot shrimp salad immediately on a bed of lettuce. Or you may want to refrigerate it for at least 30 minutes for the salad to cool a bit.
Why is it called “hot shrimp salad”?
Note: This hot shrimp salad recipe doesn’t literally mean that the dish is served hot. It just means that you cooked the shrimps before mixing them with the fruit salad. Enjoy!
