Corned beef seems to be in demand from the time the community quarantine for Covid-19 took effect in the Philippines. And it continues until now. Aside from the fact that many people prefer its taste than sardines, corned beef has a psychological effect. It makes you feel better because at least, you can afford meat—even if it’s only in a can. But how about making your own at home, so that it doesn’t have to go through canning? Here is my homemade garlic corned beef recipe. Hope you enjoy it as much as we did.
Corned Beef and Memories of Home
When I was a young girl living with my parents, my mother used to make corned beef for our small family. It wasn’t often, as we didn’t sell them, but we would remember enjoying the homemade corned beef like as special treat. After all, even back then, we could not easily buy beef, as it is quite expensive. So when my mother would take out the pressure cooker from the cabinet, then it is time for us to eat something special.
I had been married for 13 years now but I have never tried replicating my mother’s corned beef. Somehow, I felt that it was hard to make, especially that it needed a pressure cooker and I didn’t have one.
But as it turned out, if only I did my research, it wasn’t so bad. Ever since the ECQ, I have already cooked homemade corned beef twice. What I will be sharing with you is my own recipe, tweaked from my mother’s original recipe. I feel that I can already share this recipe because this has my stamp on it and many of you requested it when I first posted a picture on Facebook. Now, feel free to copy it and enjoy it at home.

Garlic Corned Beef Recipe
Making corned beef is actually easy-peasy because you just dump everything together and cook until tender. However, it is the curing part that will need earlier preparation.
What You Need: Pressure Cooker
While you can make this garlic corned beef recipe using just a plain pot, the pressure cooker lessens the cooking time and saves LPG.
Ingredients:
- 2 kg. beef cubes (with some cuts of camto or flank steak)
- 1 head garlic, minced
- 2 ½ Tbsps. Himalayan salt (2 Tbsps. iodized salt)
- 1 tsp. praque power
- 5 Tbsps. brown sugar
- 1 tsp. corned beef spice
- A pinch of seasoning granules
- 1 ¾ cups water (for boiling)
Procedure:
Wash and drain the beef. Slice them into 1-inch cubes.
In a large bowl, mix all the garlic and seasonings then stir in the beef cubes. Make sure that the beef is coated all over by the seasonings to flavor it completely.
Transfer the marinated beef into a covered container and place it in the refrigerator for curing. Curing can be between 48 to 72 hours (2-3 days). I open the container and turn the meats around twice a day so that the top part gets wet with the mixture and the flavors mix well.
On the 2nd or 3rd day, whichever is more convenient for you, transfer the beef in a pressure cooker. Loosen the meat around and pour in the water. Cook until the water reaches a slow boil then seal the cooker. Pressure cook the meat for about 20 minutes.
Make sure that that the pressure cooker is completely cool before opening.
The meat will be very tender that the cubes will separate into strands by just stirring using a fork. Divide the corned beef into serving portions, like 250 grams. Wait for them to be cool before storing in the freezer.
Homecook’s Notes:
You may discard some of the liquid. But I just included it with the meat because the beef broth has already become very flavorful because of the garlic and seasonings. It’s tastes so good to add on the rice while eating the corned beef.
If you do not have a pressure cooker, don’t fret. You can still prepare this garlic corned beef recipe at home. The cooking time will just be longer, probably an hour.
You may use this recipe and sell homemade corned beef to your friends. That will give you extra income and extend the family budget in this time of crisis,
To serve:
Chop some onions and saute in a little oil. Add the beef and fry until the garlic corned beef has become aromatic. Serve with rice and fried egg for the perfect corned beef breakfast.
