What do you know? Vegetables can be disguised into a healthy yet hearty and flavorful meal! I am not on the Keto diet but I really like this fried cauli rice recipe that I developed myself. This is one homecooking experiment that I got right the first time and became truly satisfied. Even hubby, who is very particular about food textures, appreciated this veggie dish. Read on.
The Keto Diet Looks Complicated
Many of my friends are on the Keto diet and I see them post their Keto meal creations on Facebook. They also say that it’s really effective and I have seen proof of them losing weight. But I feel that it’s too tedious for me to maintain because honestly, I do not have the time to cook my own meals three times a day.
However, I know that I need to keep the excess weight off because my frame could not support myself if I am overweight. So instead, I just take Valentus Slimming Coffee just to taper off the excess weight. If I can’t control my eating habits, Valentus is helping me keep the weight off.
The Keto diet seems really enticing but I don’t think I can go to that extent. It’s too much effort for me to keep cooking everyday. But I have been really curious about the cauli rice, so I researched about it and learned that it is made of grated cauliflower.
Authentic cauli rice needs the vegetable to be grated and then dried. But in doing so, I know that a kilo of fresh cauliflower will only yield very little if dehydrated. No wonder that it is expensive to order Keto meals with cauli rice!
My Incidental Fried Cauli Rice Recipe
Then one day, I received a message from a Mommy Rhoda, a mommy blogger friend based in Canlaon City. She said that she sent some love my way in the form of fresh produce from her hometown through her sister.
Throughout the summer lockdown because of Covid-19, our family has received so much kindness from different people. We are so thankful. This is another manna incident, where we got blessed while just staying at home.
Using Fresh Cauliflower
True enough, I did get a bag of fresh lettuce, sweet potatoes, Indian mangoes, and some cauliflower from Mommy Rhoda. We also got some baked goodies from Mommy Rox. I thought of letting our kusinera make stir-friend vegetables with the cauliflower but decided against it.
Instead, I thought it would be a good time to try and cook cauli rice. But since I was busy with some deadlines, I did not have enough time to dehydrate the cauliflower.

Additionally, I felt sorry that the volume of the grated cauliflower will really decrease upon dehydration. That is why I chose to make this fried cauli rice recipe instead. It came out really well and I was very happy with my kitchen experiment.
Ingredients:
- Cauliflower, florets grated
- Olive oil
- 2 cloves garlic, chopped
- Salt
- Dried herbs: Black pepper, cayenne pepper, paprika, and oregano
- Leftover pork, diced
- Grated cheese
- Chives, sliced
Procedure:
Cut the stems off the cauliflower and wash the florets. Drain them over a strainer. Grate the florets using a cheese grater.
Heat some olive oil in a pan and saute the garlic for about 2 minutes. Stir in the grated cauliflower and cook for several minutes, stirring occasionally.
Season with salt and add the dried herbs as well as the pork. Cook some more, stirring occasionally, until the cauli rice becomes aromatic and quite dry.
Kitchen Hack:
Move the fried cauli rice over to one side and tip your non-stick pan a bit. Pour the beaten egg and cook, stirring. When the egg is almost done, you can now straighten the pan on the stove and mix everything.
You may want to fry the cauli rice for a few more minutes until you have reached the desired consistency or “dryness”. Turn the rice from time to time so that it cooks evenly.
While still on the pan over low heat, you may grate the cheese over the cauli rice so that it can still melt. Or, you can plate your fried cauli rice and just grate the cheese on top before serving.
How to Serve Fried Cauli Rice
Garnish with the sliced chives. Another option would be green onions.
For those who want a completely vegan meal, you may omit the egg, pork, and the cheese. But please use the combination of culinary herbs—basil, oregano, and cayenne pepper with the black pepper–they were amazing!
